Grilled naan topped with BBQ chicken

Happy Tuesday, I am currently on the HUNT to hit quota at work so Josh did all the grocery shopping and I decided easy meals it is! PLUS it’s been heating up in the ATL and using the oven/cooktop was out of the question.

This BBQ chicken Grilled Naan was SO good… grilled garlic naan from Trader Joes, layered with an avocado green goddess sauce, grilled BBQ chicken, cilantro, pickled red onion, cherry tomatoes with a drizzle of ranch and sriracha. Served with some grilled asparagus, it was a perfect meal.

Ingredients/Prep

Marinate 2 chicken breasts in BBQ sauce + garlic powder + salt + pepper for a few hours in the fridge. When you are ready to start grilling, pull the chicken out of the fridge and place on a the hot grill. While the chicken is cooking, trim and season the asparagus with whatever all purpose seasoning you like. I have been obsessed with the Citrusy garlic blend from Trader Joes! SO good on meat and veggies. I made the avocado green goddess dressing by mashing 1/2 an avocado with a little ranch, plain Greek yogurt, basil pesto, lemon pepper, chopped cilantro, garlic salt and red pepper flakes. Add your asparagus and naan and grill for a few minutes. Once everything is off the grill, spread your green goddess sauce on the warm naan. Assemble the naan with the BBQ chicken, pickled red onions, cilantro and sliced cherry tomatoes! You can use any veggies you like, but those were perfect for me.
