I was cleaning out all my food pics and came across this gem I made a few weeks ago before I moved into my new place.
Clean, healthy and easy.
Ingredients: (Adjust the portions for how many people you are serving, this yields 1 person.)
1 salmon filet
1 zucchini
1 squash
1 cup of cherry tomatoes
Olive oil
Fresh Parsley
1 clove of garlic
1/2 lemon
Salt, pepper, garlic powder, red pepper flakes
Method:
I grilled everything but this would also work in your oven! Cook everything at 375 for 20ish minutes instead.
Wash your veggies, and chop them up in bite-size pieces. Drizzle a little olive oil over top and season. Wrap the veggies in a little tin foil packet. In a small bowl combine olive oil, chopped garlic and finely chopped parsley. Season the salmon with salt, pepper, garlic powder and red pepper flakes. Rub the chopped garlic and parsley mix over top the salmon. Place two slices of lemon on top of the salmon and wrap in a foil packet as well. I placed both packets on the grill and cooked for about 15 minutes on high heat. Stirring the veggies halfway through. I unwrapped both foil packets and drizzled a squeeze of lemon over top of the salmon before eating. 🙂
