Chicken Gyros

Yesterday I went on a little adventure and hiked over to Trader Joe’s. From my new place, it’s about a 30-minute walk but it was so nice out so I loved it. As I was wandering around the store, that’s when I had a craving for the Garlic Naan from TJ’s.

I picked up a few ingredients and we went to town.

This legit took me under 30 minutes to make and prep. Such an easy weeknight meal.

Ingredients for two:

2 chicken breasts

1 red onion, chopped

1 red bell pepper, chopped

Tzatziki sauce, I got store-bought from Trader Joe’s.

Butter lettuce but arugula would be super good too.

Trader Joe’s Garlic Naan, normal pita bread also works.

Lemon pepper marinade

Salt

Pepper

Garlic Powder

Oregano

Red pepper flakes

Method:

Season your chicken breast on both sides with the salt, pepper, garlic powder, oregano and red pepper flakes, place in a container. Pour the lemon pepper marinade overtop and leave covered in the fridge. Let it marinate for no less than 30 min, up to 8 hours if you really wanted to. Chop the onion and red pepper and season with salt and pepper. Wrap the veggies together in a little tin foil pouch and keep in the fridge until you are ready to grill.

When you’re ready to grill, preheat your grill on high heat. Spray the grill down with a little grill cooking spray so the chicken doesn’t stick. Place your chicken and foil packet of veggies in and cook for about 15 minutes or until the chicken is completely cooked through and the veggies are tender. Remember to flip the chicken and stir the veggies.  Once you’ve got some good grill marks on the chicken and you are almost done cooking, throw in the pitas on the top rack to warm up.

Then we assemble our gyros! Spread the tzatziki sauce down first, add the lettuce, chicken and veggies. I added in a little hot sauce for a kick! It was SO good and really easy. I paired mine with some grilled zucchini and a glass of pinot noir.
