Garlic Sriracha Shrimp Ramen

A few things I always have on hand, frozen corn, frozen jumbo shrimp and kale. Oh and obviously .49 cent chicken ramen. Whenever JP is out of town for work I ALWAYS eat pasta. Mostly because it requires zero effort and I love it.

This meal was so satisfying as I sat on the couch and watched Sex and The City.

Ingredients:

6 Shrimp deveined and tails off, seasoned with salt and pepper on both sides.

1/4 cup of frozen corn

Handful of kale

1 packet of any flavor ramen, I use Chicken

A squeeze of Siracha for flavor

Dash of sesame seed oil

1 clove of chopped garlic

Freshly chopped parsley

Dash of soy sauce

1/4 cup of water

1 Tablespoon of butter

 

Method: Cook the ramen for 2 minutes in boiling water, then rinse with cold water to stop the cooking process to avoid mushiness. While the ramen is cooking, saute your Shrimp, garlic, corn and kale in the butter and sesame oil for about 4 minutes. Add in a drizzle of Siracha and stir. Add in the water, seasoning packet from the ramen and soy sauce. Add in the noodles once they’re finished cooking and top with parsley.

And then you’re ready to plop on the couch.
