Cozy week night meals

Good morning!

This week has been super fun because I didn’t have a true layout of meals like I normally do.

Monday I made these Korean BBQ bowls. Browned some ground turkey and stirred in some chili crunch and Korean BBQ sauce. Served with white rice, leftover corn, some red cabbage and sliced radish tossed in a little olive oil and seasoned with salt and pepper. I steamed some broccolini and topped the bowl with sliced green onions. It was perfect.

Tuesday I did an easy healthy sauteed chicken + tomatoes, onions and Banza noodles topped with some mozzarella cheese. Easy peasy.

Wednesday I woke up CRAVING mac and cheese, so that’s exactly what I made. Spicy garlic siracha mac with a blend of American, pepper jack and mozzarella cheese. Heated up some leftover broccoli and served it with crisp sauteed chicken.

Something I’ve been integrating into each week’s meal plan, a sandwich of sorts! I am currently obsessed with these brioche rolls that I got from Mariano’s. I keep them in the freezer and pull them out as needed. Last night I made turkey burgers + big mac sauce and they were SO good. I did thin smash patties with Heinz “burger sauce” aka big mac sauce. Melted American cheese, a big piece of butter lettuce, grilled onions and some pickles.

It really hit the spot. Tonight I am doing a little chimichurri flank steak with potatoes and peppers… stay tuned!
