Blackened salmon sandies

Hiya friends,

I made some incredible blackened salmon sandwiches last night and I wanted to share them with y’all.

A super simple weeknight meal that Josh and I loved and will be making again!

I started with two salmon filets and removed the scales. I seasoned them with Cajun seasoning, lemon pepper and garlic salt. I whipped up a little sun-dried tomato aioli that complimented the spicy, crispy salmon so deliciously. I truthfully just threw whatever I had in the fridge and kept adjusting the flavors accordingly. A squeeze of mayo, a dab of greek yogurt, a dab of jalapeno cream cheese and fresh lemon juice were my base.  I then added in some chopped sundried tomatoes (the kind packed in oil), salt, pepper and some fresh dill.
Stirred everything together until evenly mixed and tasted delicious.

I seared the salmon on medium-high heat in a little olive oil for about 4 minutes on each side, until a nice crust formed. I used a soft buttery brioche roll that I warmed in a skillet. I topped the salmon with some sauce and arugula. Paired with steamed broccoli and sweet potato fries and we had ourselves a meal
