Low country boil/bake

Happy Sunday friends!

Friday night I made this incredible seafood bake/boil and it was seriously one of my favorite meals I have made all of quarantine. It was a little messy and super tasty. Another thing that I loved, we were covered in butter and seasonings so Josh and I didn’t touch our phones the entire time we were eating. It was a great way to spend a Friday night in.

Ingredients for two people.

8 large jumbo shrimp, peeled and deveined

10 small fingerling/baby red/baby yellow potatoes. They should be about bite size, if they’re too big cut them in half.

2 Andouille flavored chicken sausage (can use regular sausage too!) cut into bite size pieces

1lb of snow crab legs

1/2 red onion, roughly chopped

Asparagus, trimmed

2 ears of corn on the cob, cut in half

3 cloves of garlic, cut the cloves into large pieces

1/2 cup of parsley

1/2 cup of butter

I lemon, sliced

Olive Oil

Cajun seasoning or Old Bay

Garlic powder

Sea Salt + pepper

Method:

This will all come together super easy in about 45 minutes! In a large stock pot fill with water, season with a little salt and bring to a boil. Add in the potatoes and cook for 10 minutes. Once that timer is done, add in the ears of corn and cook for another 4 minutes. (So the potatoes will cook for about 14 minutes total.) While that is working, start to assemble everything else that will be baked.

The cooking time varies for each item so we will start by grabbing a large bowl. Add in the onion, garlic, shrimp, asparagus, chicken sausage, potatoes and corn (when they’re finished). Melt down the butter and squeeze 1/2 a lemon over top all of our ingredients in the bowl. Season to your liking of salt, pepper, garlic powder and cajun seasoning and mix until everything is well coated. Remove the shrimp from the bowl.  Pour everything in a large foil lined baking sheet or a foil pan bought from the store like I did with a small drizzle of olive oil. Top with lemon slices. Cook at 425 for 15 minutes. Pull out the pan of the oven, stir everything around and add in the shrimp and crab legs on top of the mix and cook for another 8 – 10 minutes. While everything is finishing cooking, I found it helpful to line the table with wax parchment paper for easier clean up!

Once everything is out of the oven, sprinkle the parsley over top and DIG IN! I used clean kitchen scissors to assist getting the snow crab open. This meal is best served family style and we used our hands to eat everything! So fun and SUPER messy.e62bd96a-59cd-4b38-9116-4b8a62ab0e80
