SHEESH,
This has been one of my favorite quarantine meals thus far. It’s super simple, minimal ingredients and almost foolproof. Everyone should race to the grocery store ASAP just to have Jalapeño cream cheese in their fridge. I have put it on my homemade pizza, avocado toast and now this.
Ingredients:
1 Large chicken breast cut in half (or 2 smaller chicken breasts, butterflied – about 1/4 inch thick)
2 cups of baby spinach
2 spoonfuls of Jalapeño cream cheese
A handful of pepper jack cheese
Garlic salt and fresh ground pepper
Olive oil
Method:
Preheat your oven to 375. Cook the spinach in a pan over medium-high heat until wilted with a drizzle of olive oil. Season with garlic salt and pepper. Remove from pan and let it cool for a few minutes. Add the cream cheese, pepper jack and spinach to a bowl and mix until smooth.
Season your chicken with salt, pepper, garlic salt on both sides. Make sure your chicken breasts are nice and thin and spread the cream cheese filling on the inside of the chicken breast and roll up until the mix is tucked inside.
Place the chicken roll ups in a baking dish (you can secure the chicken with toothpicks so the mix stays in easier but that isn’t entirely necessary if you lay it down properly.) Bake uncovered for 25 minutes.
I served mine with leftover red rice and steamed broccoli! Super easy and quick weeknight meal!
