Turkey Meatballs & Spicy Garlic Marinara

So on Tuesday I did a little meal prep and made turkey meatballs with a spicy garlic marinara, spaghetti squash and broccoli! It’s one of those meals that reheats so well so it’s good all week. If you’re feeling extra lazy and don’t want to make your own sauce, you can buy storebought, Rao’s is my favorite store bought.

Simple, healthy and easy!

Let’s start on the sauce- 

1 large can of crushed San Marzano tomatoes

8 cloves of garlic, chopped

1/2 cup of red wine

Fresh basil, torn up

crushed red pepper flakes

salt

pepper

olive oil

For the turkey meatballs-

1lb lean ground turkey

1 egg

1 shallot, chopped

1/4 bread crumbs

1/2 cup of shredded reduced fat shredded mozzarella

A few dashes of Dried Italian seasoning blend

salt

pepper

Method: Preheat oven to 375. ***if you’re going to use spaghetti squash like I did, simply use a knife and poke holes all over the spaghetti squash. Microwave for 4 minutes. Cut in half and scoop out seeds and season with salt and pepper and olive oil and place flesh side down on a cookie sheet and bake for 40 minutes.

Start the sauce– heat a large saute pan and cook the garlic in a little olive oil for about 2 minutes over medium heat. Use the back of a spoon or spatula to smash the garlic as it’s cooking to release its flavor. Add the tomatoes, red wine and seasoning. *wait to salt until the end. Add the basil but make sure to reserve some of the basil as a garnish for later. Cover with lid, cook on medium-low and stir every so often.

For the meatballs- throw all ingredients in a bowl and use your hands to combine until evenly mixed up. Roll into 1 inch balls and place on a greased cookie sheet. If you are making the spaghetti squash like I did- the meatballs cook in the oven for 20 minutes, so just time it out and cook it together with the spaghetti squash so they come out of the oven at the same time.

Once the squash is done, use a fork to shred the squash and transfer to a bowl and discard the shell of the squash. Arrange meatballs and pour sauce over top. ** with a little fresh parmesan, obviously.

Serve with steamed broccoli or whatever veggie you feel like making!!!
