Summa Time Cauliflower Gnocchi

Happy almost 4th everyone!

Our system is down at work so today is dragging so I entertain myself with EDC Videos and too much caffeine.

So y’all know pasta is my one true love, but I have found my FAVE sub for it- Trader Joe’s Cauliflower gnocchi.

Getting the gnocchi perfectly crisp is key but it’s mad flavorful and can be paired with any sauce.

Lately, I have been using an olive oil and garlic base with various veggies.

Ingredients: (serves 2+)

1 bag of cauliflower gnocchi

10-20 shrimp, peeled and deveined

1 container of cherry tomatoes

broccolini bunch, cut into smaller pieces

2 ears of corn, cut off the cob

4 cloves of garlic

splash of white wine (Pinot Grigio or Sauv blanc work)

1/2 of a lemon, juiced

salt & pepper

red pepper flakes

1/4 cup Parmesan

Directions: Cook the cauliflower gnocchi accordingly to the TJ directions. (or sub for regular pasta if you want!) Be sure not to crowed the gnocchi.

While that’s cooking (about 10-12 min) cook the shrimp in another pan. Drizzle a little olive oil in the pan and season the shrimp with salt and pepper. Toss the shrimp in and cook
on each side for 2 minutes on medium high heat. Add in garlic and red pepper flakes. Cook for another minute. Remove the shrimp from the heat and set aside. **once gnocchi is finished cooking remove from heat and set aside.

In the pan you cooked the shrimp in, add in the tomatoes, broccolini and corn to the pan. Cook for 10 minutes on medium with a lid on until the tomatoes start to burst and the broccolini is tender. Add in the wine and lemon juice. Toss in the shrimp and the gnocchi and cook for another five minutes. Season with salt + pepper. Sprinkle with parm and eat!

Now pour yourself a glass of vino and pop your happy ass on the couch!
