Anyway, anyone who knows me knows that sweater weather and fall are my favorite things. This morning I woke up with my windows open and was warm under the covers, but my nose was a little chilly. There’s something so lovely about fall in Milwaukee.
So, basically that’s what got me feenin’ for some chili. The best part about chili is there’s no one way to make it and every version is delicious and amazing.
My fave chili is spiced up with smoky chipotle peppers and I dip Fritos Scoops in as well…
Ingredients-
Giant bag of Fritos because WHY NOT. Or whatever crackers you fancy.
1 lbs lean white meat ground turkey breast (or ground beef etc.)
1 large can diced tomatoes
1 small can of green chilies
1 small can of tomato paste
1 cup of water
1 (normal size?) can of black beans (drained and rinsed)
1 can of sweet kernel corn (drained and rinsed)
1 can of chipotle peppers in adobo sauce (use as much or as little as you like. Very spicy so normally I only use one pepper and drain the adobo sauce in chili until desired spice.)
1 green bell pepper (diced)
1 yellow onion (diced)
2 cloves garlic (minced)
1 packet of chili seasoning. (Or whatever blend of chili spices you prefer)
1 container of – plain greek yogurt for topping (in place of sour cream, optional)
Parsley for garnish
Salt + pepper to taste
Prep-
Basically, throw everything in a crock pot and cook on high for 5 hours or low for 8 hours. Stir every so often. Top with all your favorite toppings such as Sour cream (or Greek yogurt), cheese, avocado, crackers, bacon, etc. BOOM done.
Amazing meal, just like that.
