This is one of my favorite recipes, simple Monday night meal.
Might I add, it’s even, healthy???
Ingredients:
Lean ground turkey breast
2-4 pre-made veggie kebabs (depending how many people you’re feeding) **If your grocery store doesn’t sell them in the fresh counter, make your own with peppers, red onions, mushrooms, cherry tomatoes, or whatever combination you like.
1/4 cup breadcrumbs
1 clove garlic
1/4 of a sliced cucumber
1/4 cup of mediterranean herbed feta
1 cup of low-fat plain Greek yogurt
1/2 of a squeezed lemon
1 cup of brown basmati rice
1 tablespoon fresh dill
Drizzle of olive oil
Salt & pepper
Dried oregano
1 egg
Prep-
Combine greek yogurt, lemon, dill, garlic, cucumber salt and pepper and blend with an immersion blender to make tzatziki sauce. Put in the fridge. In a large bowl, combine ground turkey, oregano, salt, pepper, egg and bread crumbs. Roll the meat into balls and poke a little hole into the center of each meatball and stuff with feta. Meatballs should be about an inch in diameter. Add meatballs to the veggie kebab and set aside until ready to cook. Start cooking brown basmati rice according to directions + a little oregano, salt, pepper and drizzle of olive oil.
You can either grill the kebabs with a grill pan, normal charcoal/electric grill or bake.
I used a greased grill pan (olive oil) but if you choose to grill just make sure the grill is nice and hot. Grill for about 3 minutes on each side, same directions goes for grill pan.
If you’re baking the kebabs, place on greased cookie sheet and bake at 375 for 20 minutes. rotating every 5 minutes.
BOOM and then you’re done.
Serve the kebabs on a bed of rice and top with tzatziki sauce. Pairs well with pinot noir.
